Cecina is a type of very popular dehydrated meat that is cut and dried in the sun with salt and lemon, later to be wrapped with butter in a kind of banana leaf roll. The traditional way of eating it is roasted on a comal and is accompanied with sauce, avocado, beans and tortillas.
